Tomato-basil relish recipe
Ingredients
- 3 pounds (lbs) of tomatoes, peeled, seeded, and diced
- 1 small diced onion
- 2 cloves of garlic
- 1 cup (c) of fresh, shredded basil
- 3 ounces (oz) of vegetable oil
- 1 ounce (oz) of balsamic vinegar
- Salt to taste
- Black pepper to taste
Directions
- Combine the tomatoes, onion, garlic, and basil in a large mixing bowl.
- In another bowl, combine the oil and vinegar to make a dressing.
- Season the dressing with salt and pepper.
- Add the dressing to the tomato mixture and combine to coat well.
- Let the mixture sit for 15 to 30 minutes to marinate.
