Stir-fried asparagus with shiitake mushrooms recipe
Ingredients
- 1 pound (lb) of asparagus
- 6 ounces (oz) of fresh shiitake mushrooms
- 1 tablespoon (tbsp) of vegetable oil
- 1 tablespoon (tbsp) of sesame oil
- 1 tablespoon (tbsp) of chopped garlic
- 4 ounces (oz) of oyster sauce
- Crushed red chilies (optional)
Directions
- Wash the asparagus.
- Cut the ends off of the asparagus stalks.
- Cut the trimmed asparagus stalks at an angle into pieces about 1 inch long.
- Wash the mushrooms.
- Cut off the mushroom stems and slice the mushroom caps into slices about half an inch thick.
- Heat the vegetable and sesame oils in a wok or sauté pan.
- Add the garlic and stir-fry for a few seconds.
- Add the asparagus and mushrooms.
- Stir-fry for 1 minute.
- Add the oyster sauce and crushed chilies.
- Stir-fry until the asparagus is nearly tender. It should take about 3 minutes.
