Sautéd kale with balsamic vinegar recipe

Ingredients

  • ½ cup (c) of diced red onion
  • ½ cup (c) of grated parmesan cheese (optional)
  • 1 diced red bell pepper
  • 2 teaspoons (tsp) of minced garlic
  • 2 tablespoons (tbsp) of balsamic vinegar
  • 4 tablespoons (tbsp) of olive oil
  • 8 ounces (oz) of thinly sliced button mushrooms
  • 8 cups (c) of roughly chopped kale
  • Salt to taste
  • Black pepper to taste

Directions

  1. Heat a large pan over medium heat.
  2. Add the olive oil to the pan.
  3. Add the onions and peppers.
  4. Cook for 2 minutes, or until the vegetables begin to soften.
  5. Add the mushrooms.
  6. Cook for 2 more minutes.
  7. Add the garlic, kale, and balsamic vinegar.
  8. Cook until the kale darkens in color (about 2 minutes).
  9. Add the cheese (optional).
  10. Salt and pepper to taste.
