Sautéd kale with balsamic vinegar recipe
Ingredients
- ½ cup (c) of diced red onion
- ½ cup (c) of grated parmesan cheese (optional)
- 1 diced red bell pepper
- 2 teaspoons (tsp) of minced garlic
- 2 tablespoons (tbsp) of balsamic vinegar
- 4 tablespoons (tbsp) of olive oil
- 8 ounces (oz) of thinly sliced button mushrooms
- 8 cups (c) of roughly chopped kale
- Salt to taste
- Black pepper to taste
Directions
- Heat a large pan over medium heat.
- Add the olive oil to the pan.
- Add the onions and peppers.
- Cook for 2 minutes, or until the vegetables begin to soften.
- Add the mushrooms.
- Cook for 2 more minutes.
- Add the garlic, kale, and balsamic vinegar.
- Cook until the kale darkens in color (about 2 minutes).
- Add the cheese (optional).
- Salt and pepper to taste.
