Roasted garlic mashed cauliflower recipe
Ingredients
- 1 whole bulb of garlic
- 1 whole head of cauliflower
- 2 teaspoons (tsp) of fresh thyme (optional)
- ½ teaspoon (tsp) of salt
- ½ teaspoon (tsp) of black pepper
- Olive oil
Directions
- Preheat oven to 375°.
- Cut the cauliflower head into individual florets.
- Cut off the very top of the garlic bulb, exposing the cloves (about ¼ to ½ inch).
- Drizzle olive oil over the exposed garlic cloves.
- Wrap the garlic bulb in aluminum foil and put it in the oven until it’s soft (about 40 to 50 minutes).
- Set the garlic bulb aside to cool.
- Place a colander or strainer in a pot.
- Add 2 to 3 inches of water to the bottom of the pot.
- Place the cauliflower florets in the strainer.
- Bring the water to a boil.
- Cover the pot.
- Steam the cauliflower until it is very tender (about 10 to 15 minutes).
- Put the cauliflower, garlic cloves, thyme, salt, and pepper in a food processor.
- Blend the mixture until it is the consistency of mashed potatoes.
- Add salt and pepper to taste.
