Ratatouille recipe
Ingredients
- 12 ounces (oz) of diced onions
- 1 tablespoon (tbsp) of chopped garlic
- 4 ounces (oz) of olive oil
- 12 ounces (oz) of green or red bell peppers
- 12 ounces (oz) of diced eggplant
- 8 ounces (oz) of diced zucchini
- 24 ounces (oz) of peeled, seeded, and chopped tomatoes
- 1 ounce (oz) of finely chopped fresh basil
- 1 ounce (oz) of salt
- Black pepper to taste
Directions
- Sauté the onions and garlic in the olive oil in a large pan.
- Add the bell peppers, eggplant, and zucchini to the pan and sauté for 8 to 10 minutes.
- Add the tomatoes, basil, salt, and pepper.
- Sauté for 5 minutes.
