No sugar added jelly roll for Christmas Yule log recipe
Ingredients
- 2 cups of all-purpose flour
- ½ teaspoon (tsp) of salt
- 2 teaspoons (tsp) of baking powder
- 4 eggs
- 2 tablespoons (tbsp) of Splenda
- 1 cup of milk
- 2 teaspoons (tsp) of vanilla extract
- 1 cup of sugar free jam
Directions
- Preheat your oven to 350 degrees.
- Sift the flour, salt, and baking powder into a large bowl.
- Break the eggs into a mixing bowl.
- Using the wire whisk attachment on your mixer, whisk the eggs on high speed for ten minutes, adding the Splenda a little at a time.
- Heat the milk until it is slightly warm (about 20 seconds in a microwave).
- Add the milk to the mixing bowl.
- Switch to the paddle attachment on your mixer.
- With the mixer on low speed, add the dry ingredients a little at a time until fully combined.
- Line a small sheet pan with parchment paper and spray with non-stick spray.
- Pour the batter onto the parchment paper and spread it evenly.
- Bake for 15 minutes.
- Remove the pan from the oven.
- Flip the pan upside down on a clean work surface and pull the parchment paper off of the cake.
- Let the cake cool.
- Place the cooled cake on a length of plastic wrap.
- Spread the jam on the cake.
- Roll the cake toward you until it looks like a log.
- Cut a corner piece at an angle to represent a tree stump, and put it on top of the roll at the center.
- Garnish with sugar-free candies and chocolate.
- Dust with sugar substitute.
