Heart healthy sautéed beef tips recipe
Ingredients
- ½ pound (lb) of all purpose flour
- 1 teaspoon (tsp) of salt
- 4 pounds (lbs) of trimmed and cubed lean beef tips
- 2 ounces (oz) of vegetable oil
- 4 ounces (oz) of diced onions
- 2 ounces (oz) of diced celery
- 2 ounces (oz) of diced carrots
- 5 minced garlic cloves
- 1 ounce (oz) of red wine
- 2 ounces (oz) of tomato paste or puree
- 1 pint (pt) of low fat, low sodium beef stock
- Black pepper to taste
Directions
- Mix the flour and salt in a bowl.
- Dredge the beef tips in the flour mixture and shake off any excess flour.
- Heat a pan over medium heat.
- Add the coated beef tips and sear them on all sides.
- Add the onions, celery, and carrots.
- Sauté for 3 to 5 minutes.
- Add the garlic.
- Cook for 1 minute.
- Add the tomato paste or puree.
- Stir until heated through.
- Deglaze the pan with the red wine and beef stock.
- Bring the mixture to a boil.
- Reduce to a simmer and let it cook until the beef is tender.
- Serve with egg noodles or mashed potatoes.
