Fish tacos
Ingredients
- 8 ounces (oz) of salmon or other fish
- 4 whole wheat tortillas
- 4 ounces (oz) of shredded cabbage
- 1 ounce (oz) of chopped chipotle peppers
- 4 ounces (oz) of fat-free mayonnaise
- ½ ounce (oz) of lemon juice
- 3 ounces (oz) of Mrs. Dash no-salt taco seasoning
- 1 ounce (oz) of cooking oil
- ½ teaspoon (tsp) of Old Bay seasoning
- Salt to taste
- Black pepper to taste
Directions
- Season the fish with salt, pepper, Mrs. Dash, and Old Bay seasonings.
- Heat a sauté pan over medium high heat.
- Add the cooking oil.
- Place the salmon in the pan skin-side down.
- Cook 4 to 5 minutes, until browned.
- Turn the fish over and cook until browned.
- Continue cooking the fish until it is done. Use a food thermometer to check for an internal temperature of 145°F.
- Remove the fish from the pan and let it rest in a warm place.
- Place the mayonnaise, chipotle peppers, and lemon juice in a mixing bowl.
- Mix until smooth.
- Break the fish into small pieces.
- Heat the tortillas in a pan until warm.
- Spread the mayonnaise across the tortilla.
- Add the shredded cabbage.
- Add pieces of fish.
- Fold in half and serve.
