1 bunch (about 9 cups) of kale, tough stems and center ribs removed
1 avocado, diced
2 tablespoons (tbsp) of fresh lemon juice
1 tablespoon (tbsp) of balsamic vinegar
1 cup of thinly sliced red cabbage
1 large apple, cored and chopped
2 tablespoons (tbsp) of raisins
Half of a medium red onion, minced and soaked in ice water for 10 to 15 minutes and drained
Directions
Roll up each kale leaf and thinly slice.
Add to a large bowl along with avocado, lemon juice, and vinegar.
Using your hands, massage the avocado, lemon juice, and vinegar into the kale leaves until the kale starts to soften and the leaves are coated. About 2 minutes.
